This Brett Beer presents as an elegant, complex fusion of a farmhouse Saison and the viticultural heritage of Sant Pere de Ribes. Aged in white wine barrels, it showcases a sophisticated interplay between wild fermentation funk and the floral, honeyed aromatics of Moscatell and Xarel.lo grapes. The nine-month maturation period introduces soft oak tannins and a vinous depth that complements the rustic, earthy Brettanomyces character. Expect a dry, champagne-like effervescence that carries notes of stone fruit, wet hay, and a bright, refreshing acidity, resulting in a profile that evokes the sun-drenched countryside and the nuances of a fine sparkling wine.
Appearance. Deep gold to pale amber (7-10 SRM) with a slight, hazy luminescence from the whole fruit and wild yeast. It supports a moderately persistent, fine-beaded white head that leaves delicate lacing.
Aroma. High intensity aromatics of white wine must, floral Moscatell, and ripe Xarel.lo grapes. The Brettanomyces provides a rustic backdrop of hay, horse blanket, and leather. Noticeable oak vanillin and a light vinous acidity intermingle with spicy fermentation phenolics.
Taste. Initial tartness leads into complex layers of white fruit—peach, grape, and apricot. The malt is minimal, providing a crackery base for the funk. Mid-palate reveals earthy Brett, spicy black pepper, and dry oak. It finishes bone-dry and crisp with a lingering floral grape aftertaste and clean, refreshing acidity.
Mouthfeel. Medium-light body with high, prickly carbonation that cleanses the palate. A noticeable, warming alcohol presence is well-integrated. Light tannic astringency from the grape skins and barrel aging adds structure.
