This Straight Sour Beer presents a complex intersection of sharp lactic acidity and sophisticated wood aging. The 6.2% ABV base provides a sturdy platform for the clean, lemony sourness typical of the style, further elevated by its time in whisky barrels. The barrel influence introduces nuances of toasted oak and vanilla, weaving through a profile of crackery pale malts and light orchard fruit esters of peach and green apple. While the Belgian influence suggests a rustic complexity, the spirituous whisky notes provide a warming, dry finish that balances the bold, refreshing tartness with a sophisticated, lingering woody depth.

Appearance. Straw to pale gold (2–3 SRM). Topped by a large, dense white head with poor retention typical of acidic styles. Clarity is generally clear to slightly hazy.

Aroma. High intensity of sharp lactic sourness and lemon zest. Low biscuity malt and crackery notes are present. Moderate esters of green apple and peach are complemented by secondary whisky-derived notes of vanilla, toasted oak, and a hint of caramel. No hop aroma is present.

Taste. Dominant clean lactic sourness with a tart lemon and green apple fruitiness. The malt profile is light, offering grainy and crackery flavors that support the acidity. Hop bitterness is undetectable. The whisky barrel aging contributes a subtle spirituous flavor, vanilla, and light oak tannins. The finish is very dry and crisp with a lingering, clean acidity.

Mouthfeel. Light to medium-light body with high, effervescent carbonation. A noticeable but well-integrated alcohol warmth is present from the barrel aging. Features a crisp acidity and a faint wood-derived tannic astringency.
