Dystopía is a complex Wild Specialty Beer that showcases an eleven-month maturation in white wine barrels. The sensory profile is defined by a vibrant interplay between the tart acidity of the base sour ale and the deep, jammy notes of plums and succulent grapes. The extended wood aging imparts a nuanced vinous character and soft tannins, while the wild fermentation delivers a sophisticated leathery funk. On the palate, a crisp, refreshing acidity brightens the stone fruit and grape esters, leading into a bone-dry finish. It is a masterclass in balance, weaving together fruit, wood, and wild fermentation into a singular, rustic experience.
Appearance. Deep gold to amber with a hazy, soft pinkish-red hue from the plums and grapes. The head is white to off-white, forming a thin, effervescent layer that dissipates quickly with minimal lacing, typical of acidic wild ales.
Aroma. High intensity aromatics lead with a sharp, lactic acidity and leathery Brettanomyces funk. Dominant scents of ripe plums and green grape skins merge with a distinct vinous quality from the white wine barrels. Low grainy malt is buried under layers of oak, vanilla, and a hint of earthy mustiness.
Taste. Initial sharp tartness gives way to nuanced fruit flavors of dark plums and wine grapes. The fruit character is expressive but fermented dry, lacking residual sugar. The mid-palate reveals white wine woodiness and a slight peppery spice. Hop bitterness is virtually absent, allowing the acidity to provide structure. The finish is remarkably dry, clean, and lingering with a vinous aftertaste.
Mouthfeel. Medium-light body with a prickly, high carbonation that enhances the perceived acidity. A subtle tannin-driven astringency from the grapes and eleven months in wood adds structure. Light, well-integrated alcohol warmth provides a gentle glow.
