Jeffrey Shults es un neoyorquino que radica en Morelia y es maestro cervecero. Él inició este proyecto en 2006 y me contó en entrevista que elaboró esta cerveza para festejar su cumpleaños. El jubilo del festejo dio como resultado una creación con aroma intenso a flores y frutas, lo cual evidencia la presencia del lúpulo característico del estilo.
El sabor de esta IIPA es totalmente congruente con lo detectado en nariz: durazno, miel, limón y mandarina. Además, es cremosa y con buen cuerpo, así como posee una consistencia resinosa y espuma abundante que se queda en el vaso por cierto tiempo después de ser servida. Y, a pesar de sus 7.9 grados de alcohol y 128 IBU´s (por sus siglas en inglés International Bittering Units), es bien recibida por el paladar, incluso para aquellos que no soportan demasiado amargor.
Precisamente, Shults dijo que las IPA´s son su estilo preferido no sólo por su sabor, sino por su interesante historia, que es una muestra de invención cervecera e interculturalidad.
