Brewed with a blend of barley and wheat, it offers a lean, dry structure where the natural acidity of the raspberries enhances the fruit's vibrancy without overwhelming the palate. Appearance. 3–6 SRM (pastel pink); light pink head with low retention and minimal lacing; hazy to translucent appearance.
Aroma. Moderate-high intensity; dominant aromas of fresh, ripe raspberries and tart red berries; underlying notes of crackery wheat and soft dough; clean lactic acidity with a very subtle earthy funk characteristic of wild fermentation.
Taste. Initial burst of tart raspberry juice and red currant; light bready malt and wheat notes provide a brief mid-palate structure; very low hop bitterness; acidity is firm but bright, accentuating the fruit; bone-dry finish with a lingering raspberry skin tartness.
