This non-alcoholic Experimental Beer presents a sophisticated botanical tapestry woven onto a soft, hazy Witbier base. The presence of wheat and oats creates a smooth, bready foundation for a vibrant gin-inspired profile. Distinctive juniper berries and coriander seeds provide a classic gin spine, while green cardamom and grains of paradise add a subtle peppery warmth. Floral accents from chamomile and lemongrass harmonize with the zing of ginger and a delicate hint of cinnamon. Despite the low alcohol content, the interplay of these aromatics and the grainy malt creates a refreshing, complex experience that mirrors a classic botanical spirit.
Appearance. Pale straw to light gold (2-4 SRM). Features a moderate white head with fair retention and light lacing. Characteristically hazy to opaque due to the use of wheat and oats.
Aroma. Moderate to high intensity. Dominated by a complex botanical bouquet of piney juniper, citrusy lemongrass, and spicy coriander. Underlying notes of grainy-sweet wheat and oats are present, with subtle floral chamomile and a hint of ginger spice. Hop aroma is nearly absent.
Taste. Initial impression is crisp and botanical. Light bready wheat and creamy oat flavors support an intricate array of gin aromatics: resinous juniper, lemony lemongrass, and peppery grains of paradise. Hop bitterness is very low, as the balance is driven by spices and botanicals. The finish is clean and dry, with lingering notes of cardamom and a faint cinnamon warmth.
Mouthfeel. Medium-light body, bolstered by the addition of oats and wheat to prevent a watery texture. Carbonation is moderate to high, providing a refreshing prickle. No alcohol warmth is perceived. Very low astringency.
