L'Ombria IPA presents a Mediterranean interpretation of the American IPA, distinguished by its artisanal blend of barley and wheat malts. The sensory profile is marked by an intense aromatic complexity where traditional hop bitterness meets evocative notes of white pepper, cilantro, and licorice. Deeper malt contributions of caramel, walnut, and dried fig provide a robust, toasted foundation, reflecting the brewer's signature torretacto character. This medium-bodied ale is topped by a dense, naturally carbonated foam, leading into a smooth palate with a pleasant, lingering astringency and a pronounced, spicy finish that highlights its unique ingredient composition.
Appearance. Light reddish-amber (approx. 12-14 SRM). Densa, off-white foam with excellent persistence and fine lacing. Slight haze permissible due to the use of wheat malt.
Aroma. High intensity. Significant toasted malt presence featuring walnut, caramel, and dried fig. Hop-derived and specialty notes are prominently spicy and herbal, reminiscent of white pepper, cilantro, and a touch of licorice. Clean fermentation profile.
Taste. Initial impression of toasted malt sweetness and caramel, balanced by a firm, medium-high hop bitterness. Flavors of walnut and fig integrate with spicy notes of pepper and cilantro. The finish is medium-dry with a lingering, accented aftertaste and a clean bitterness.
Mouthfeel. Medium body with a creamy, medium-broad structure. Carbonation is moderate and well-integrated. A minimal, pleasant astringency is present in the finish, with low alcohol warmth.
