This collaborative Gose offers a festive twist on the historical style, incorporating rye and a bespoke citrus marmalade. The result is a brilliantly refreshing and tart ale that balances the classic saline edge of a traditional Gose with vibrant layers of lemon and orange zest. The addition of rye provides a subtle, peppery spice that interplays with the clean lactic acidity and the bright, fruit-forward profile of the citrus. Effervescent and crisp, it delivers a complex array of marmalade notes against a soft, doughy wheat and grainy rye backbone, finishing bone-dry with a mouthwatering, slightly spicy finish.
Appearance. 3-4 SRM. Pale yellow with a moderate to full haze. Features a moderate to tall white head with tight bubbles and good retention; highly effervescent.
Aroma. Moderate intensity with a bright lactic sourness. Dominant aromas of fresh citrus zest and orange marmalade are layered over a bready, doughy malt character with a light, peppery rye spice. Restrained coriander provides a fresh, lemon-like top note with a faint hint of sea salt.
Taste. Initial impression is noticeably tart and mouthwatering. Moderate bready wheat malt and grainy rye flavors are quickly followed by a vibrant citrus marmalade character. Very low bitterness with no hop flavor. Light salt character is present but restrained, providing a savory roundness. The finish is dry and fully attenuated, with refreshing acidity and a lingering spicy, citrusy aftertaste.
Mouthfeel. Medium-light body with a tingly, mouthwatering quality from the salt. Very high carbonation creates an effervescent, prickly sensation. No alcohol warmth; crisp and refreshing without astringency.
