Appearance. Very pale straw (2-3 SRM). Slight haze with an effervescent, large white head that shows moderate to poor retention.
Aroma. Moderate to high intensity of clean lactic sourness. Secondary notes of tart apple and lemon zest are present. Pale malt character is low, presenting as subtle biscuity or crackery notes. No hop aroma.
Taste. Strong, clean lactic sourness defines the initial impression and dominates the palate. Very low grainy, bready malt flavor provides minimal support. Bitterness is undetectable. Fruity esters of lemon and tart apple provide complexity. Finish is very dry and crisp.
Mouthfeel. Light body. High carbonation provides a prickly, refreshing sensation. No alcohol warmth. Crisp acidity with no astringency.
