Sour Ale 8 º
Nigredo is a sophisticated Straight Sour Beer that transforms its traditional base into a deep, Double Black expression of alchemical complexity. Matured for eighteen months in Cognac barrels and refermented on a massive concentration of sour griotte cherries, it captures the sensory essence of a Black Forest cake. Intense aromas of tart red fruit and dark chocolate lead into a palate defined by sharp lactic acidity, rich roasted malt, and the vinous, warming influence of spirit-soaked oak. The 8% ABV provides a velvety depth, while the cherries lend a bright, acidic edge that ensures a dry, lingering finish.
Appearance. Opaque, deep ebony to black; thick, creamy, tan head with a slight reddish-pink tint from the cherries; moderate retention with light lacing.
Aroma. High intensity; dominant sharp lactic sourness and bright tart griotte cherry; complex notes of vanilla and brandy-soaked oak from Cognac barrels; underlying dark chocolate and toasted malt; no hop aroma; clean fermentation without funk.
Taste. Initial sharp, clean lactic acidity; rich flavors of tart cherry and dark cocoa reminiscent of a Black Forest cake; subtle vinous warmth with notes of dried fruit and toasted oak; no detectable hop bitterness; finishes very dry and acidic with a lingering cherry-skin tartness and clean malt depth.
Mouthfeel. Medium-full body with a creamy texture; moderate carbonation; noticeable alcohol warmth from the 8% ABV and barrel aging; crisp acidity provides a mouth-puckering sensation without astringency.
