L'Ermitage Cellarium presents a sophisticated harmony between the malty foundations of a Bière de Garde and the wild, acidic complexity of 2-year-old Cantillon lambic. The aroma opens with a rustic cereal profile, blending bready malt with the distinctive funky, leathery notes of Brettanomyces and a whisper of oak tannin. On the palate, a toasty, biscuity malt backbone is brightened by a sharp, vinous acidity and hints of dried fruit. A year of oak aging contributes structural depth, leading to a bone-dry, effervescent finish that balances farmhouse funk with a refined, cellar-aged elegance.
Appearance. Deep gold to light amber (8-12 SRM). Slightly hazy due to the use of rustic cereals and bottle conditioning. Fine-beaded, white to off-white head with moderate retention and delicate lacing.
Aroma. Moderate malty richness with distinct bready and toasty notes. Prominent wild character from the Lambic blend, featuring leathery funk and a light lemony acidity. Low herbal hop notes. Complex oak-derived vanillin and a touch of aged, cellar-like mustiness.
Taste. Initial impression of toasty, crackery malt and rustic grains quickly gives way to a balanced, tart acidity. Subtle stone fruit esters and a hint of apple. Low hop bitterness allows the sharp, lactic tartness and oak tannins to provide structure. The finish is very dry, clean, and lingering with a faint woodiness and citrus-like snap.
Mouthfeel. Medium-light body with a smooth, almost silky texture. High carbonation provides a lively, scrubbing effervescence. Very low alcohol warmth, well-integrated and refreshing without any astringency.
