This Handcrafted Rosy Saison is a vibrant, floral interpretation of the traditional Saison, utilizing organic rosebuds throughout the brewing process to evoke the nostalgic aroma of Greek Turkish delight. The sensory experience is defined by an intense floral bouquet of rosewater and perfume, seamlessly integrated with the classic spicy and fruity character of Belgian yeast. Extended aging on lees provides a sophisticated mouthfeel and subtle autolysis notes of toasted bread, adding richness to the otherwise crisp, high-gravity profile. Expect a balance of peppery phenols, soft cereal grains, and a dry, effervescent finish that masks its warming 7% ABV with elegance.
Appearance. Pours a deep gold with soft orange hues (8-12 SRM). Features a dense, rocky white head with excellent retention and significant Belgian lacing. Unfiltered and slightly hazy due to lees aging.
Aroma. High intensity floral aroma dominated by rosebuds and rosewater. Complementary fruity esters suggest pear and red apple, alongside moderately spicy yeast phenols resembling black pepper. Low earthy hop character and a faint, nutty autolysis note from the lees.
Taste. Initial floral impression of rosewater and Turkish delight, followed by a soft, grainy malt palate. Moderate bitterness is balanced by spicy yeast and citrusy esters.
