This experimental Grape Ale pushes the boundaries of the hybrid style, utilizing Mavro Kalavritino grape skins to create a profile that leans heavily into the world of fine wine. Spontaneous fermentation by wild microorganisms on the skins yields a complex, musty aroma layered with rich forest berries. The appearance is a striking rose-pink with a delicate head. Thanks to batonnage—aging on the lees—the beer possesses a surprisingly full body for the style, while the lower carbonation mimics a still wine. Expect a sophisticated, high-ABV experience where rustic earthy notes meet a refined, dry, and vinous finish.
Appearance. Distinctive pink to light ruby hue. Low to medium-low head retention with a faint reddish tint. Slight opalescence may be present from lees aging, though generally clear to brilliant.
Aroma. High intensity aromatic profile dominated by Mavro Kalavritino grape characteristics. Distinct musty, rustic notes from spontaneous fermentation meld with vibrant wild berry scents. Neutral malt character is very low; hop aroma is absent.
