KYKAO - Handcrafted

This Handcrafted Double IPA presents an intense sensory evolution, centered on a robust hop profile driven by Mosaic and Simcoe. Aromas of ripe stone fruits and a distinct resinous dankness fill the air, supported by a clean, neutral malt backbone. On the palate, the experience is defined by an extravagant display of tropical fruit and pine, leading to a balanced interplay of light residual sweetness and firm bitterness. Despite its 8% ABV, the alcohol is masterfully integrated, offering only a subtle, smooth warmth. This is a complex, hop-forward ale that finishes with a clean, lingering bitterness, characteristic of a well-crafted modern Double IPA.

Appearance. Gold to light orange-copper (SRM 7-10). Excellent clarity with a moderate-sized, persistent off-white head that leaves consistent lacing.

Aroma. Intense hop aroma featuring prominent notes of ripe peach, apricot, and mango from the Mosaic and Simcoe hops. A secondary layer of resinous pine and dank herbs is present. Malt is low and neutral, providing a light grainy background without significant caramel.

Taste. High hop flavor mirrors the aroma with stone fruit and tropical berry layers. Bitterness is high but smooth, avoiding harshness. A light, clean malt character provides support before transitioning into a dry to medium-dry finish with a lingering hoppy aftertaste of pine and citrus zest.

Mouthfeel. Medium body with a smooth, velvety texture. Carbonation is medium-high, providing a crispness that balances the hop oils. Alcohol warmth is remarkably restrained and well-integrated for the strength.
