Kykao - Handcrafted Deconstructed NEIPA
This Double IPA blurs stylistic boundaries, merging the lush tropical profile of a NEIPA with the structural backbone of a traditional West Coast powerhouse. Deep amber in hue, it presents an intense bouquet of lychee and papaya driven by massive dry-hop additions of Talus, Idaho 7, and Ekuanot. The grain bill, enriched with Oats and distinctive Caramel malts, provides a velvety, medium-plus body that supports a unique wine-must sweetness. Sabro and Ekuanot contribute to the aromatic depth, while the finish offers a delicate hop burn and resinous spice that elegantly counters the residual sugars for a bold, complex sensory experience.
Appearance. Deep amber to dark amber (12–14 SRM). Large, persistent, off-white head with excellent lacing. Slight haze is present, though more clarified than a typical New England style.
Aroma. High intensity hop aroma featuring prominent notes of lychee, papaya, and pink grapefruit. Secondary notes of coconut, cedar, and pine are evident. A supportive, sweet malt background of caramel and toasted bread provides a solid foundation. Clean fermentation profile with no significant esters.
Taste. Initial impression is a burst of tropical stone fruit and citrus. Hop flavors of papaya and melon are dominant, supported by a rich, caramel-forward malt sweetness. Bitterness is moderately high and firm but balanced by a wine-must residual sweetness. The finish is lingering and complex, featuring a soft alcohol warmth and a clean, fruity aftertaste with a hint of resin.
Mouthfeel. Medium-full body with a velvety, smooth texture from the oat addition. Moderate carbonation. Noticeable but well-integrated alcohol warmth. A delicate, late hop-derived astringency is present in the finish.
