KYKAO - Handcrafted

This Ancient Dark Brew presents a sophisticated collision of a massive Imperial Stout base and the transformative microflora of clay amphora aging. Deep roasted malts provide a foundation of dark chocolate, espresso, and molasses, while the porous clay facilitates controlled oxidation, softening the heavy roast into smooth, earthy layers. The influence of Brettanomyces and wild bacteria introduces a delicate lactic tartness and complex dark fruit notes like plum and raisin, underscored by an intriguing mushroom-like earthiness. Despite the high gravity, the fermentation ensures a balanced profile where warming alcohol and savory salinity meet a lingering, fruit-tinged finish.

Appearance. Opaque black with high viscosity; a thin, dark brown head forms briefly before dissipating into a light rim.

Aroma. High intensity with prominent notes of molasses, toasted dark bread crust, and rich cocoa. Secondary aromas include earthy mushroom, damp soil, and dark stone fruits, with a noticeable but well-integrated alcoholic warmth.

Taste. Initial impressions of sweet dark malt and molasses are quickly countered by a medium lactic tartness. Intense roasted flavors of black coffee and bitter chocolate dominate the mid-palate, complemented by plum and berry fruitiness. The finish is long and complex, featuring a touch of savory salinity and lingering yeast-derived fruit esters.

Mouthfeel. Medium-full body with a thick, syrupy texture that is somewhat lightened by the acidity. Carbonation is low to moderate. Significant alcohol warmth is present but smooth, with minimal astringency despite the heavy roast.
