This Double IPA presents an intense sensory experience driven by a heavy-handed addition of Galaxy and Simcoe hops. The Galaxy hops deliver a primary punch of passionfruit and ripe peach, while Simcoe provides a grounding layer of pine resin and earthy citrus. A unique inclusion of lactose rounds out the profile, offering a velvety texture and a subtle, creamy sweetness that balances the firm bitterness. At 8% alcohol, the beer exhibits a well-integrated warmth that supports its bold, tropical aromatics. It finishes with a lingering hoppy resonance, blending modern fruit-forward character with a classic, resinous backbone.

Appearance. Pale gold to light orange-copper (7–12 SRM). Topped with a persistent, creamy white head that leaves significant lacing. Exhibits a slight, attractive haze characteristic of a heavily dry-hopped profile and the addition of lactose.

Aroma. Intense aromatics of passionfruit, peach, and melon from the Galaxy hops, contrasted by Simcoe’s notes of pine needles and grapefruit zest. The malt presence is neutral and grainy, while the lactose adds a faint, sweet-milk creaminess in the background. Fermentation is clean with very low fruity esters.

Taste. A powerful hop-forward attack of tropical fruit and resinous pine. The bitterness is high but feels somewhat softened by the unfermentable lactose, which provides a soft, supportive sweetness. Low grainy malt character provides a foundation. The finish is medium-dry with a lingering, clean bitterness and a touch of fruit skin.

Mouthfeel. Medium-full body with a notable creaminess and smooth texture from the lactose. Carbonation is moderate to high. A gentle, well-contained alcohol warmth is present at 8% ABV, without any harsh hop-derived astringency.
