KOM Beer Pepinacle
KOM Beer's Pepinacle is a potent Double IPA that showcases an intense aromatic triad of Mosaic, Simcoe, and Citra hops. It pours a deep gold with a persistent white head, releasing a complex bouquet of tropical mango, sticky pine resin, and bright grapefruit zest. The palate is defined by an assertive hop bitterness that slices through a lean, grainy malt base, while the Mosaic hops contribute notes of blueberry and stone fruit. At 9.5% ABV, a smooth, well-integrated alcohol warmth emerges on the finish, which remains impressively dry and crisp, leaving a lingering, resinous trail of citrus and earth.
Appearance. Pours a clear, deep gold to light orange-copper with a moderate-sized, persistent, off-white head that leaves significant lacing.
Aroma. Intense hop-forward aroma featuring heavy tropical fruit and berry notes from Mosaic, alongside the distinctive pine and earthiness of Simcoe. Citra adds a sharp citrus layer of lime and grapefruit. Malt is very low and neutral, providing a clean, grainy backdrop with a hint of smooth alcohol.
Taste. Initial impression is a blast of resinous pine and tropical fruit flavors. High bitterness is firm and clean, never harsh. Mid-palate reveals soft, unobtrusive malt character that quickly gives way to a very dry, hop-focused finish. Aftertaste is long and bitter with lingering notes of grapefruit rind and pine needles.
Mouthfeel. Medium-bodied with a smooth, slightly oily texture from the hop oils. Carbonation is medium-high, providing a lively scrub. A noticeable but restrained and smooth alcohol warmth is present, consistent with its high strength.
