Idefix presents as a refreshing take on the American Pale Ale, showcasing a vibrant interplay between classic and modern hop profiles. The presence of Citra drives bright bursts of grapefruit and zesty lime, while Simcoe layers in complex notes of resinous pine and subtle passionfruit. At a sessionable 4.2% ABV, the beer remains exceptionally approachable, supported by a clean, lean malt backbone that allows the hop aromatics to lead. A crisp bitterness provides structure, leading to a dry and remarkably clean finish that highlights the distinctive citrus and needle-fine pine qualities of its featured hops.
Appearance. Luminous pale golden with brilliant clarity. Pours with a moderately large, frothy white head that exhibits good retention and leaves delicate lacing on the glass.
Aroma. Moderate-high hop intensity featuring prominent grapefruit, lime zest, and tropical mango from the Citra, complemented by Simcoe’s signature forest pine and slight earthy resin. A light, clean, bready malt scent supports the hops without competing. The fermentation profile is very clean with negligible esters.
Taste. Initial impressions of bright citrus peel and tropical fruit flavors transition into a resinous, piney mid-palate. A supportive but restrained grainy malt sweetness provides a foundation for the moderate hop bitterness. The balance leans toward the hops, finishing clean and dry with a lingering note of grapefruit pith and pine needles that remains smooth rather than harsh.
Mouthfeel. Medium-light body with a crisp, refreshing mouthfeel. Carbonation is moderate-high, providing a lively prickle on the tongue. Very smooth finish with no detectable alcohol warmth or astringency.
