Paraterraforma is a complex Brett Beer that showcases an intricate marriage of brewing and winemaking. Fermented with the KSB-15 mixed culture and blended with Trebbiano and Moscatel grape must, it offers a sophisticated sensory profile. The aroma is highly expressive, featuring wild, earthy funk alongside floral Moscatel notes and dry citrus. On the palate, a striking acidity and evident salinity frame flavors of peach, uva, and a diverse berry medley of blueberry and gooseberry, driven by unique South African hops. Despite its significant strength, the finish is bone-dry and remarkably crisp, reflecting the high attenuation of the wild yeast.
Appearance. Golden straw to deep gold with a slight haze. Pours with a moderate white head that fades to a persistent rim; light lacing.
Aroma. High intensity with a complex blend of wild funk, wet hay, and earthy notes from the Brettanomyces. The grape must provides a distinct vinous character with floral and honeyed Moscatel highlights. South African hops contribute nuances of tropical fruit and red berries.
