Klosterbryggeriet Non-Blance is a refreshing non-alcoholic Weissbier that artfully integrates the classic German wheat character with vibrant organic citrus and organic coriander. The sensory profile is defined by a bready, doughy base of malted wheat and Pilsner malt, which supports the spicy botanicals and light yeast-driven esters. Despite the low alcohol content, it maintains a crisp, effervescent presence on the palate. The organic citrus provides a bright acidity that complements the herbal complexity of the coriander, leading to a dry and remarkably clean finish. It successfully mimics the fluffy mouthfeel of a traditional wheat ale while delivering an exceptionally light, thirst-quenching experience.

Appearance. Pale straw to light gold with a very thick, moussy, and persistent white head. The appearance is significantly hazy with a healthy yeast and wheat shine.

Aroma. Moderate to high intensity. Dominant aromas of organic citrus zest and spicy organic coriander are layered over a soft bready, doughy wheat backbone. Low notes of clove phenols and subtle banana esters are present.

Taste. The initial impression is bright and citrus-forward, followed by a low grainy-sweetness from the Pilsner malt and wheat. Organic coriander provides a spicy mid-palate complexity. Bitterness is very low, allowing the tart citrus notes to lead into a dry, refreshing finish. Fermentation character includes light clove and banana, well-balanced against the spice additions.

Mouthfeel. Light to medium-light body with a fluffy, airy texture. High carbonation creates a spritzy, effervescent sensation on the tongue. There is no alcohol warmth, and it finishes with a clean, crisp snap.
