This Imperial Saison offers a sophisticated sensory experience shaped by twenty-four months of maturation. The extended time in French oak barrels imparts delicate tannins and a refined structure, while the addition of Brettanomyces introduces a rustic, earthy funk that layers beautifully over the spicy Belgian yeast profile. Bright notes of orange peel provide a zesty citrus lift, cutting through the elevated alcohol. The result is a dry, highly attenuated ale where the citrus-led fruitiness meets a complex, peppery spice and a hint of wood-derived vanilla. It is a masterful display of mixed fermentation, balancing farmhouse character with barrel-aged elegance.

Appearance. Deep gold to light amber (8–10 SRM) with a slight, persistent haze. Features a dense, rocky, ivory-colored head with exceptional retention and intricate Belgian lace. High effervescence is visible.

Aroma. High intensity with a complex bouquet of zesty orange peel and spicy black pepper. A distinct Brettanomyces character provides notes of leather and barnyard funk, supported by a lightly grainy malt base and subtle toasted oak. Hop character is low, appearing as earthy and floral notes.

Taste. The initial impression is dry and complex, featuring a soft graininess quickly overtaken by peppery phenols and tart citrus from the orange peel. Moderate bitterness is enhanced by the high attenuation and Brett-driven funk. The French oak contributes a very faint vanilla sweetness and wood tannin, leading to a bone-dry, lingering finish of spice and citrus zest.

Mouthfeel. Medium body with very high, effervescent carbonation. A noticeable but well-integrated alcohol warmth is present. Low astringency from the oak tannins adds a structured, clean feel without being harsh.
