This Belgian Tripel presents a complex, aromatic profile typical of its monastic heritage. A prominent malt character, driven by Pilsner malt, offers a soft, grainy-sweet foundation. The nose is greeted with high-intensity spicy phenols, specifically peppery and clove-like notes, alongside fruity esters reminiscent of lemon and orange peel. On the palate, a firm bitterness balances the delicate honey-like malt sweetness, leading to a characteristically dry and effervescent finish. Subtle, floral Continental hops emerge late, while the 8% alcohol provides a deceptive, well-integrated warmth. Appearance. Deep yellow to pale gold (approx. 5-6 SRM) with brilliant clarity. Features a long-lasting, creamy, rocky, white head that leaves dense, characteristic Belgian lacing as it slowly recedes.
Aroma. High-intensity aroma featuring a complex bouquet of spicy, peppery, and clove-like phenols. Moderate fruity esters of orange and lemon are present, supported by a light, grainy-sweet malt character and a low, floral hop presence. A soft, spicy alcohol note is also detectable.
Taste. Initial impression of rounded, soft malt with a grainy-sweetness. The mid-palate introduces moderate fruity esters and spicy phenols consistent with the aroma. A firm bitterness (approaching 30-40 IBUs) is accentuated by a very dry finish. The aftertaste is clean with lingering spicy-fruity yeast notes and a touch of hop bitterness.
Mouthfeel. Medium-light body that is surprisingly light given the alcohol content. Highly carbonated and effervescent. Alcohol warmth is deceptive and smooth, lacking any harsh or fusel heat. No significant astringency.
