Infinity Dragon is a vibrant Fruit Beer that harmonizes a soft Pale Ale base with a trio of exotic fruit additions. The aroma is dominated by the sharp, citrus zest of yuzu and the lush, sun-ripened flesh of peach, while dragonfruit provides a subtle, exotic undertone. On the palate, the yuzu provides a refreshing acidity that cuts through the mellow, stone-fruit sweetness of the peach. The finish is remarkably crisp and dry, as the fruit sugars have fermented out, leaving a clean canvas of light bready malt. It is a light-bodied, highly crushable collaboration that balances tropical complexity with high drinkability.
Appearance. Pours a distinctive pale gold with soft pinkish-salmon highlights from the dragonfruit. Displays a slight haze and is topped by a frothy, white head with moderate retention and light lacing.
Aroma. Moderate to high intensity aromatic profile. Bright, zesty yuzu citrus dominates initially, followed by the sweet, floral scent of ripe peach. Very low bready malt and minimal floral hop notes are present in the background, allowing the fruit to lead.
Taste. Initial impression is a refreshing burst of tart yuzu and juicy peach. The dragonfruit adds a delicate, tropical nuance. The base pale ale provides a subtle cracker-like malt backbone. Bitterness is low to mild, serving only to balance the fruit. The finish is dry and clean with a lingering citrus zest aftertaste.
Mouthfeel. Medium-light body with moderate to high carbonation that enhances the fruit's brightness. No alcohol warmth is perceived; the texture is smooth with a very slight, mouth-watering acidity from the yuzu.
