Snowdrops is a luminous Hazy IPA that captures the essence of late winter transitioning into spring. This iteration utilizes three distinct forms of Mosaic to deliver a complex, layered profile of ripe blueberry, earthy pine, and juicy mango. A generous addition of the Australian hop Vic Secret provides a sharp contrast with vivid notes of crushed pineapple and passionfruit. The malt profile is intentionally understated, offering a clean, bready foundation that allows the vibrant hop oils to shine. With its soft, plush mouthfeel and restrained bitterness, the beer concludes with a clean, tropical finish as refreshing as the crisp blooms it honors.
Appearance. SRM 4. Deep straw to golden with a heavy, opaque haze and a luminous glow. Topped by a dense, rocky, white meringue-like head with excellent retention and thick lacing.
Aroma. High intensity aromatics lead with aggressive pineapple and passionfruit from the Vic Secret. Mosaic adds depth with hints of blueberry, citrus zest, and a subtle resinous undertone. Background malt is neutral and lightly grainy, supporting a clean fermentation profile with soft, fruity esters.
Taste. The initial impression is a wash of tropical fruit, specifically pineapple and mango. Mosaic provides mid-palate complexity with berry and stone fruit flavors. Bitterness is moderate but perceived as low due to the soft water profile and full body. The finish is off-dry and exceptionally smooth, featuring lingering tropical notes without any hop harshness or vegetal character.
Mouthfeel. Medium-full body with a silky, pillowy texture. Carbonation is moderate, providing enough lift to balance the density. A light, well-integrated alcohol warmth is present at 7.2%, but the overall sensation is soft and free of astringency.

Our family regularly visited Chawton, the once home of Jane Austin, and January was always a special visit. Our friend Jermey Knight would ring us up and invite us out for a walk to enjoy the fields of freshly bloomed Snowdrops. It became a cherished annual event.
