King River Brewing’s Mabon Doppelbock is a decadent expression of German brewing tradition, emphasizing deep Maillard complexity. This dark brown lager opens with an inviting bouquet of rich toffee and bready malt, accented by a delicate herbal lift from Saaz hops. The palate is dominated by a luxurious, full-bodied sweetness, weaving together notes of toasted crust and a subtle hint of coffee. Despite its 7.5% strength, a month of lagering ensures a clean, silky-smooth delivery. It balances a hearty malt backbone with moderate bitterness, finishing with a lingering, elegant warmth that defines this contemplative and deeply malt-forward Doppelbock.

Appearance. Dark brown with deep mahogany and ruby highlights (SRM 22–25). Topped by a dense, persistent off-white head with excellent lacing. High clarity despite the depth of color.

Aroma. High intensity malt-forward aroma featuring rich toffee, toasted bread crusts, and a faint hint of coffee. Low herbal hop aroma from Saaz is present but subordinate. Negligible fermentation esters with a clean lager profile and very light alcohol notes.

Taste. Intensely malty and rich. Initial flavors of sweet toffee and bready malt lead into subtle roasted depths reminiscent of light coffee. Hop flavor is low and herbal. Bitterness is moderate, providing just enough structure to balance the dominant malt. The finish is smooth and moderately sweet with a clean, lingering malt presence.

Mouthfeel. Full-bodied with a silky, creamy texture. Carbonation is moderate. Noticeable but well-integrated alcohol warmth consistent with its strength. Smooth throughout without astringency or harshness.

Mabon Dopplebock is a lager, with a distinctively strong malty flavour, reminiscent of bread. This is a wonderful rich beer, with deep colour. Originally consumed by monks during lent it was considered the source of substance and has the title of “liquid bread”. We play on this by really promoting the bready quality of the malt, which is a layering of lightly kilned malts, in large quantities to produce the deep colour in this beer. Keeping a faith component with this beer, we’ve named it after the Mabon pagan harvest festival of times long gone.

Bready, sweet, slight toffee.

Wonderful bready notes, mild sweetness and a typical noble spiciness attributed to the finishing hop we use in traditional German lagers and our Kolsch.
