Killer Sprocket St Barney’s
St Barney’s is a radiant Belgian Tripel that belies its 9.1% ABV with a bright, effervescent golden body and a deceptively light-footed profile. Built on a foundation of Pilsner Malt, Wheat, and the spicy edge of Rye Malt, it offers a soft honeyed sweetness that transitions into a dry, peppery finish. The aroma is a complex tapestry of citrus and ripe banana, lifted by Hallertau Mittelfruh and Styrian Goldings, while Motueka adds a modern lime-citrus twist. Traditional spice additions of Orange Peel and Coriander seeds meld seamlessly with yeast-driven notes of clove and warming spice, creating a sophisticated, monastic-inspired ale.
Appearance. Bright, deep golden color (SRM 6) with brilliant clarity. Features a tall, creamy, rocky white head with excellent retention and intricate Belgian lacing.
Aroma. High intensity. A complex bouquet of ripe banana and bright orange zest is supported by soft, grainy-sweet Pilsner malt and a touch of honey. Spicy, peppery phenols and subtle clove notes intertwine with floral, spicy Hallertau Mittelfruh and a hint of lime from Motueka hops. Clean fermentation with a gentle, warming alcohol presence.
Taste. Initial soft, honeyed malt sweetness is quickly balanced by firm hop bitterness and a spicy rye influence. Flavors of citrus peel and banana lead into a complex mid-palate of clove, pepper, and coriander. Finishes remarkably dry and clean with a lingering spicy-fruity yeast character and a touch of floral Styrian Goldings hops.
Mouthfeel. Medium body that feels lighter due to high carbonation and a crisp, effervescent mouthfeel. Deceptive alcohol warmth is smooth and well-integrated, providing a gentle glow without harshness. No significant astringency.
