Kicks Brewing Rubicon
Rubicon is an assertive Double IPA that showcases an explosive profile of potent New Zealand hops. Pouring a luminous gold with a persistent white head, it delivers high-intensity aromas of passionfruit, crushed lime, and diesel-tinged tropical fruit typical of premium Southern Hemisphere varieties. Despite its potent 9.2% ABV, the beer remains remarkably drinkable with a lean, pale malt backbone that avoids heavy caramel weight. The palate is dominated by a firm, resinous bitterness and a complex layered fruit character, finishing dry with a clean, lingering hop snap. It is a bold, unapologetic expression of modern hop saturation and clean fermentation.
Appearance. Deep gold to light orange; excellent clarity with a moderate-sized, persistent off-white head that leaves thick lacing on the glass.
Aroma. Intense hop-forward bouquet featuring tropical notes of passionfruit and guava, accented by crushed lime and a hint of white wine grape. Low, neutral malt sweetness and a clean fermentation profile with a soft, supportive alcohol presence.
Taste. High hop bitterness is immediately apparent but clean, supporting flavors of citrus zest, gooseberry, and pine. The malt character is low and unobtrusive, providing a grainy, crackery foundation. Finishes quite dry with a lingering hop-derived bitterness and a hint of smooth alcohol.
Mouthfeel. Medium body with a smooth, slightly oily texture from high hop concentration. Moderate carbonation provides a crisp lift, accompanied by a restrained and well-integrated alcohol warmth.
