Illuminator is a sophisticated and indulgent Doppelbock that highlights the depth of premium German malts and the refinement of an eight-week lagering period. The profile is characterized by a luxurious malt backbone featuring toasted bread crust, rich Maillard-driven caramel, and subtle dark fruit leather notes. Despite its robust 8.6% ABV, the beer remains exceptionally smooth with a well-integrated alcohol warmth. The clean lager fermentation ensures the malt remains the protagonist, balanced only slightly by the restrained bitterness of traditional German hops. It finishes with a lingering, bready sweetness and a velvety texture that exemplifies the best qualities of this strong German lager style.
Appearance. Deep copper to dark mahogany in color (18-25 SRM) with brilliant clarity and visible ruby highlights. It presents a large, creamy, off-white head with excellent persistence and delicate lacing.
Aroma. High intensity malt-forward bouquet with notes of toasted bread, rich caramel, and a hint of chocolate. Moderate dark fruit esters like plum and fruit leather are evident, accompanied by a clean, moderate alcohol aroma. Hop aroma is virtually non-existent.
Taste. Initial impression is very rich and intensely malty. Deep flavors of Munich malt provide a bready and toasty foundation, supported by dark fruit flavors and a touch of caramel sweetness. Hop bitterness is moderately low, ensuring the malt dominates the balance. The finish is long and malty, demonstrating good attenuation that avoids a cloying aftertaste.
Mouthfeel. Medium-full to full body with a smooth, creamy, and viscous texture. Carbonation is moderately low. A gentle, well-integrated alcohol warmth is present without any harshness or burning sensation.
