Kererū Brewing Company Seraphina - NZ Whisky Barrel-Aged Scotch Ale
Seraphina is an opulent Wee Heavy that has undergone ten months of maturation in rare New Zealand whisky casks. This aging process, utilizing both French and American Oak, imbues the beer with an extraordinary depth of flavor derived from the barrels' previous lives holding red wine and single malt whisky. The sensory profile is dominated by rich, bready-toasty malt and decadent layers of Christmas cake, raisins, and dried fruits. The influence of the whisky is smooth and sophisticated, offering a tawny port-like complexity. The palate is treated to a luxurious, chewy viscosity that balances the intense caramel and toffee sweetness with a warm, integrated alcohol finish.
Appearance. Deep amber to dark copper in color (approximately 22 SRM) with brilliant clarity and deep ruby highlights. It produces a thick, creamy tan head that shows moderate persistence and leaves significant legs on the glass as it recedes.
Aroma. High intensity with dominant scents of caramelized sugar, toffee, and toasted breadcrumbs. Supportive notes of raisins and plums are complemented by the distinct aroma of aged whisky, toasted oak, and a subtle vinous character from the red wine casks.
Taste. The initial impression is rich and sweet, featuring heavy caramel, butterscotch, and bready-toasty malt. Flavors of dark fruit, specifically raisins and dates, provide a Christmas cake-like complexity. Hop bitterness is very low, allowing the malt and the tawny port-like vinous notes to lead. The finish is long and smooth with a gentle hint of roasted grain.
Mouthfeel. Full-bodied and viscous with a thick, chewy, and creamy texture. Carbonation is moderate to low. A significant but smooth alcohol warmth is present, providing a sophisticated heat that balances the high malt gravity without any harshness.
