This Straight Sour Beer is a masterclass in barrel-influenced maturation, inspired by the historic sour ales of Münster. Twenty months of aging in a single red-wine barrel imparts a sophisticated vinous character, blending seamlessly with the beer’s clean lactic acidity. Aromas of ripe peaches and floral honey lead into a complex palate where the subtle tannic structure of black tea meets the tart, fruity depth of red wine. The extended aging provides a mature, bone-dry profile that balances sharp lemony sourness with delicate malt nuances. It is an elegant, refreshing, and deeply layered representation of traditional Westphalian brewing heritage.
Appearance. Pale gold with light copper hues (SRM 5-7) and a slight haze. Features a moderate, frothy white head with fair retention and effervescent carbonation.
Aroma. High intensity with a dominant, sharp lactic sourness. Prominent notes of red wine and ripe peaches are layered over a subtle floral honey malt character. A distinctive, earthy black tea aroma adds complexity. No hop aroma is present.
Taste. Initial impression is a bold, clean lactic sourness. Subtle bready malt and honey flavors provide a brief foundation before being overtaken by mature red wine notes and stone fruit esters. The finish is bone-dry and crisp, with a lingering tartness and a refined, tea-like tannin structure. Hop bitterness is undetectable.
Mouthfeel. Medium-light body with high carbonation. Features a crisp, tongue-tingling acidity and a light, well-integrated alcohol warmth. Smooth yet lively on the palate with very low astringency.

L’attività che Jan Kemker aveva iniziato come semplice esperimento è ben presto diventata una vera e propria opera di reincarnazione dell’antica birra locale: ingredienti originali, lieviti selvaggi e lunghe maturazioni in botti di legno rendono unico il profilo organolettico di ogni bottiglia, ciascuna decorata da un’affascinante grafica dai toni pastello.
La Aoltbeer 14-2021 Single Barrel è una Wild Ale che si ispira proprio alla tipica birra di Münster, conferendole in questo caso maggior spessore e un ricercato tocco di esclusività grazie alla lunga maturazione di venti mesi realizzata in un’unica botte di ex vino rosso, che contribuisce a sviluppare un carattere pieno, corposo e vinoso accompagnato da sfumature dolci (miele) e fruttate (pesca), speziate (tannino) e balsamiche (tè nero).
L’acidità di sottofondo è ricca, sfaccettata nell’espressività e ben presente al sorso, effervescente e dai lineamenti funky con note selvagge e di cantina che arricchiscono e completano l’esperienza degustativa.
