This Saison offers a vibrant sensory journey, built upon a crisp foundation of Pils malt and wheat. The yeast-driven esters and spicy phenols are amplified by a unique botanical blend of rhubarb, rosehip, and green oxalis, providing a tart, floral complexity. Hallertau Blanc dry-hopping introduces distinctive notes of white grape and elderflower, while Magnum provides a clean, supporting bitterness. The addition of Sichuan pepper lends a subtle, tingly spice that complements the dry, effervescent finish. It is a refreshing, highly aromatic interpretation that balances rustic grain character with an adventurous, citrusy, and slightly acidic fruit profile.
Appearance. Pale gold to light orange with a hazy, unfiltered clarity. Features a long-lasting, dense, rocky white head with significant Belgian lacing.
Aroma. High intensity with a complex mix of citrus and pome fruit esters. Low grainy malt character is secondary to a spicy, peppery yeast profile. Notable herbal and floral notes from rosehip and green oxalis, with a distinctive white wine and elderflower hop character. A subtle, sharp fruitiness from rhubarb and a hint of peppery spice are present.
Taste. Initial impression is refreshing and acidic, moving into a soft, grainy wheat palate. Hop flavors of white grape and flowers are moderate. Fermentation provides a spicy, peppery character that is enhanced by the Sichuan pepper. Bitterness is moderate but appears firm due to a very high attenuation and dry finish. Aftertaste is lingering, spicy, and floral.
Mouthfeel. Medium-light body with high, effervescent carbonation. Low alcohol warmth. Presence of green oxalis and rhubarb adds a slight, crisp acidity rather than astringency. Smooth but lively on the tongue.
