Witbier 5.5 º 16 IBU
This celebratory Witbier presents an intriguing twist on the classic style, offering a refreshing and deeply floral profile. While rooted in a traditional unmalted wheat base, it departs from the norm with a surprising, vibrant hue that hints at its festive purpose. The aroma is led by zesty citrus and delicate perfumy blossoms, supported by a bready, grainy malt backbone. On the palate, light notes of honey and vanilla mingle with peppery coriander and soft orange peel. It finishes crisp and dry, with a high level of carbonation that keeps the mouthfeel lively and light, making it a perfect floral toast.
Appearance. Distinct from the typical pale straw of the style, this version displays a surprising rosy to light amber hue (approx. 6–9 SRM). It maintains a characteristic heavy cloudiness from suspended yeast and wheat starch, topped by a dense, moussy white head with excellent retention.
Aroma. Moderate intensity featuring a bready maltiness with subtle hints of honey. Pronounced floral aromatics blend with zesty orange and lemony coriander. A faint peppery phenolic character from the Belgian yeast is present, while hop aroma remains negligible, allowing the botanical and spice notes to lead.
Taste. The initial impression is crisp and refreshing. Bready and grainy wheat flavors dominate the malt profile, accompanied by a soft vanilla-like sweetness. Zesty citrus and floral notes are prominent, balanced by a low bitterness and a light, peppery spice. The finish is remarkably dry and clean without any lingering bitterness or harshness.
Mouthfeel. Medium-light body with a smooth, slightly creamy texture derived from the wheat. High carbonation creates a lively, effervescent sensation on the tongue. There is a very light, well-integrated alcohol warmth appropriate for the strength, contributing to a refreshing and highly drinkable character.
