Bock 6.7 º
This Dunkles Bock presents a masterclass in German malt complexity, showcasing a deep red hue with ruby highlights. The foundation of Munich, Pils, and Aromatic malts creates a rich sensory tapestry of toasted bread and toasted hazelnut, further deepened by the Maillard products essential to the style. A touch of Black malt provides the striking color and a hint of depth without roasted harshness. While the HBC 682 hops provide a clean, supportive bitterness, the focus remains firmly on the decadent malt profile. It finishes smooth and well-attenuated, offering a classic, warming experience that honors traditional brewing techniques.
Appearance. 14–22 SRM. Deep copper to mahogany red with distinct ruby reflections. Brilliant clarity. Large, dense, creamy off-white head with excellent persistence and fine lacing.
Aroma. Medium-high intensity. Dominant rich, bready-malty character with pronounced toasted hazelnut and crusty bread notes. Moderate Maillard products provide a savory-sweet depth. Hop aroma from HBC 682 is virtually absent, maintaining a clean lager profile with very subtle dark fruit esters and a whisper of clean alcohol.
Taste. Initial impression is deeply malty and rich. Complex layers of toasted bread, Maillard-driven caramelization, and nuttiness dominate the palate. Hop bitterness is low to moderate, serving only to balance the malt. No roasted, burnt, or dry biscuity character despite the inclusion of Black malt. The finish is clean and well-attenuated, leaving a lingering toasted malt presence that remains balanced rather than cloying.
Mouthfeel. Medium-full body with a smooth, velvety texture. Moderate carbonation. A gentle, well-integrated alcohol warmth is present. Entirely smooth without astringency or harshness.
