This elegant Saison artfully bridges farmhouse tradition with vinous sophistication. Fermented in white wine barrels, it presents a sophisticated layer of oak and delicate grape must. The use of Hallertau Blanc hops is masterful, amplifying the barrel’s character with bright notes of gooseberry, lemongrass, and white currants. A classic Belgian yeast profile provides a spicy counterpoint of cracked black pepper and citrus zest. At 5% ABV, the beer remains light and exceptionally refreshing, concluding with a signature bone-dry finish and a lingering herbal bitterness. It is a refined, effervescent expression where rustic grain meets the crisp complexity of a dry white wine.

Appearance. Pale gold (approx. 6 SRM) with a dense, rocky white head that shows excellent retention and Belgian lace. The body is unfiltered with a slight, persistent haze and visible effervescence.

Aroma. High intensity aromatic profile featuring a mix of fruity-spicy yeast and continental hops. Distinctive white grape and gooseberry notes from Hallertau Blanc hops are prominent, followed by black pepper phenols and citrusy esters. A subtle vinous oak character and light grainy malt sit in the background.

Taste. Initial impression is remarkably crisp and dry. Hop flavors of white currant and lemongrass from the Hallertau Blanc dominate the mid-palate, balanced by a peppery fermentation profile. Moderate hop bitterness is heightened by very high attenuation. The finish is very dry and clean, featuring a lingering herbal and spicy aftertaste with a hint of woody tannin.

Mouthfeel. Medium-light body with very high carbonation, providing a prickly, effervescent mouthfeel. Low alcohol warmth is well-integrated. No astringency, though a slight tannic dryness from the wine barrels adds structure.
