Appearance. Very dark brown to jet black (35–40 SRM) and opaque. Pours with a moderate tan head that shows fair retention for a sour, leaving light lacing.
Aroma. High intensity. Robust notes of dark chocolate and espresso-like roast are immediately evident, layered with a sharp lactic acidity and vinous oak. Farmhouse yeast provides earthy, funky undertones and dark fruit esters like plum or cherry. No hop aroma.
Taste. A complex interplay of roasted grain bitterness and assertive lactic sourness. Initial flavors of cocoa and burnt malt are quickly cut by a tart, lemony acidity. The oak aging contributes a tannic, vinous depth. Low hop bitterness. Finishes very dry and acidic with lingering notes of dark fruit and charred wood.
