This high-gravity Saison presents a complex marriage of rustic farmhouse character and modern hop innovation. The aromatic profile is led by the Motueka hops, which impart vibrant notes of fresh lime zest and crushed tropical fruit, further elevated by the floral essence of the infused honey. Oak barrel aging contributes subtle layers of dry vanilla and soft tannins, grounding the effervescent, spicy yeast esters. Despite the substantial strength, the finish remains signature Jester King—exceptionally dry and crisp—with a lingering interplay of peppery phenolics and citrus oils that define this sophisticated, high-alcohol collaboration.
Appearance. Deep gold to pale amber (7-9 SRM) with a slight, hazy luminescence typical of unfiltered farmhouse ales. It supports a dense, ivory, rocky head with excellent retention and significant Belgian lacing. Effervescent carbonation is visible throughout.
Aroma. High intensity with a multifaceted bouquet. Pronounced citrus-lime and tropical fruit from Motueka hops mingle with spicy black pepper phenolics and pome fruit esters. The honey refermentation adds a delicate wildflower aroma, while the barrel aging introduces a faint toasted oak and vanilla backdrop. Malt is secondary, appearing as a light, rustic graininess.
Taste. Initial impression is bright and fruity, quickly followed by a complex wave of lime peel and floral honey notes. The mid-palate features grainy malt and a moderate hop bitterness that is sharpened by high attenuation. Spicy yeast character provides a peppery counterpoint to the subtle wood-derived tannins. It finishes bone-dry and crisp with a lingering citrus and spicy aftertaste.
Mouthfeel. Medium body, remaining remarkably effervescent and lively on the palate. Noticeable but well-integrated alcohol warmth reflects the high gravity. Low astringency from oak and a clean, non-cloying texture despite the honey addition and substantial ABV.
