This rustic Saison showcases a vibrant collaboration of Texas terroir and modern hop profiles. The sensory experience is led by a bright bouquet of lime zest, apricot, and tropical fruit derived from a generous dry hop of Motueka and Rakau. Beneath the fruit lies the earthy, grainy character of TexMalt Llano pilsner and Denton County wheat, softened by flaked oats. Texas wildflower honey, integrated into the fermentation, provides a delicate floral lift rather than sweetness, as the beer remains bone-dry. Subtle herbal and spicy notes from organic Perle hops merge with peppery yeast phenols, concluding in an effervescent, highly attenuated, and refreshing finish.
Appearance. Hazy pale gold (approximately 4 SRM) with a dense, rocky, long-lasting white head and excellent Belgian lacing.
Aroma. High intensity with a complex blend of lime, stone fruit, and soft tropical notes. Peppery yeast phenols and floral honey aromatics are prominent, supported by a light, grainy malt backbone and a hint of spicy herbal hops.
Taste. Initial impression is exceptionally dry and crisp. Flavors of citrus zest and green pome fruit lead into a rustic, grainy malt profile. Hop bitterness is moderate and firm, balancing the spicy yeast character and floral honey notes. The finish is lean and lingering with a clean, peppery aftertaste.
Mouthfeel. Medium-light body with very high, effervescent carbonation. The addition of oats provides a smooth texture despite the high attenuation, with no perceptible alcohol warmth.
