This foudre-aged Saison showcases Jester King’s signature farmhouse complexity, weaving together an intricate tapestry of fruit and spice. The sensory experience is led by the rustic influence of spent peaches from Fēn Táo and rich plum juices, which provide a nuanced stone fruit depth. Distinctive notes of ripe bananas meld with the tropical, creamy aroma of toasted coconut, while a subtle dusting of nutmeg adds a warm, botanical counterpoint. The wood-aged character introduces a soft tannin and a whisper of funk, all supported by a lean, grainy malt profile. It concludes with a signature bone-dry, effervescent finish that remains remarkably refreshing despite its layered adjunct additions.

Appearance. Pours a hazy, pale orange to golden amber with a dense, rocky, ivory head that exhibits excellent retention and thick Belgian lacing. Effervescent with visible carbonation.

Aroma. High aromatic intensity featuring a complex blend of stone fruit esters, specifically peach and plum, alongside spicy yeast phenols. Toasted coconut provides a tropical top note, complemented by earthy nutmeg and a light, grainy malt sweetness. A distinct foudre-aged character contributes subtle oak and a touch of wild farmhouse funk.

Taste. Initial impression is tart and fruity, dominated by peach skins and dark plum. The mid-palate reveals grainy malt and soft banana esters, followed by a secondary layer of coconut and spicy nutmeg. Bitterness is moderate but perceived as firm due to the extremely dry finish. Fermentation character is phenolic and peppery, with a lingering, slightly acidic and earthy aftertaste.

Mouthfeel. Medium-light body with very high, prickly carbonation that creates a lively, effervescent sensation. Minimal alcohol warmth. Finishes crisp and bone-dry with a slight tannic astringency from the foudre and spent fruit skins.
