This 2020 vintage captures the rustic terroir of the Texas Hill Country through a complex blend of spontaneously fermented ales aged in oak for up to three years. Infused with Texas-grown grapefruit juice and zest, it presents a vivid citrus brightness that intertwines with the earthy, barnyard funk of native microflora. Notes of aged hops provide a subtle floral backdrop to the local grains' soft bready base. High attenuation results in a crisp, dry profile where the sharp zestiness of the fruit balances the delicate oak tannins, finishing with a lingering, puckering citrus refreshment.
Appearance. Pale gold to light amber (5–8 SRM). Pours with a moderate white head that recedes quickly to a thin collar; light lacing. Slight haze is present from the refermentation with grapefruit juice and natural conditioning.
Aroma. High intensity. Bright, fresh grapefruit zest and pith dominate initially, followed by complex spontaneous fermentation notes of wet hay, dusty earth, and a touch of goat-like funk. Hints of toasted oak and a very low, aged hop floral character.
Taste. Immediate tart grapefruit citrus and pithy bitterness. The malt profile is lean with soft wheaty notes from local grains. Complex Brettanomyces character provides lemon peel, stone fruit, and a mild, leather-like funk. Very dry finish with a light, non-lactic acidity and a subtle woody structure from oak maturation.
Mouthfeel. Medium-light body with high, spritzy carbonation that enhances the fruit’s vibrancy. Low alcohol warmth. Minimal astringency, though grapefruit zest and oak tannins provide a structured, clean mouth-cleansing effect.
