This collaborative Saison is a complex interplay of rustic grains and artisanal additives. The use of wheat and rye provides a sturdy, grainy backbone that supports a vibrant fruit profile driven by refermented Mexican plums. The sensory experience is uniquely shaped by Texas wildflower honey smoked over rosemary, contributing a delicate, herbal smokiness that weaves through the traditional peppery phenols of the farmhouse yeast. Effervescent and dry, it balances the stone fruit tartness with a subtle savory edge, finishing with a lingering earthiness. It is a masterful synthesis of Texas terroir and German brewing tradition, highlighting the interplay of pome fruit and wild herbal notes.
Appearance. Hazy, deep gold to light amber with a slight copper hue from the plum addition. Features a tall, dense, ivory head with excellent retention and significant Belgian lacing. Highly effervescent.
Aroma. High intensity. Initial notes of tart Mexican plums and stone fruit esters are layered over a base of grainy wheat and spicy rye. Distinctive herbal rosemary and a faint, savory wisp of pit smoke from the honey emerge as it warms. The yeast character is classically spicy, reminiscent of black pepper, with no significant hop aroma.
Taste. The palate opens with a burst of tart plum and citrus esters, immediately followed by the rustic, spicy grip of rye and soft wheat. Hop bitterness is moderate, providing a clean counterpoint to the fruit. The rosemary smoked honey manifests as a complex, savory herbal note rather than a sweet one, integrating seamlessly with the peppery fermentation phenols. The finish is remarkably dry and crisp with a lingering tartness and a trace of earthy smoke.
Mouthfeel. Medium-light body with a high, prickly carbonation that provides a lively, effervescent mouthfeel. No perceived alcohol warmth. Slight tannic astringency from the plum skins and rye, contributing to the dry sensation.

Last August, our good friend Sebastian Sauer of Freigeist Bierkultur in Köln, Germany came to visit us at Jester King. We brewed a medium strength wort with water, barley, wheat, rye, and hops, then added rosemary smoked honey to the boil. Prior to the brew day, we took Texas wildflower honey to Stiles Switch BBQ in Austin and smoked the honey in their pits over rosemary sprigs. We then added the rosemary smoked honey late in the boil. After fermenting in a stainless steel tank for a few weeks, we took Mexican plums, de-pitted and pureed them in-house, and refermented them with the beer. The beer was then packaged in September and naturally conditioned in bottles and kegs.
