Jester King Brewery Serrata
Serrata is an elegant, rustic Saison that marries the cereal-forward depth of a heavy Spelt grist with the delicate botanical nuances of Shiso leaf. This collaboration between Jester King and Gigantic presents a soft, pale orange hue with the high effervescence typical of the style. The Shiso leaf, steeped as a tea, imparts a distinct aromatic layer of white flowers and creamy coconut flesh, which beautifully complements the spicy-fruity esters of the Belgian yeast. On the palate, the Spelt provides a surprisingly full, grainy body that is expertly balanced by a soft tannic quality and a crisp, bone-dry finish.
Appearance. Pours a hazy, pale orange to deep gold (SRM 6-8) with a long-lasting, dense, rocky white head that leaves significant Belgian lace on the glass.
Aroma. High intensity aromatic profile featuring fruity esters of lemon and pear alongside a unique botanical layer of white flowers and subtle coconut flesh. The heavy Spelt grist provides a rustic, grainy, slightly nutty malt base, complemented by spicy yeast notes of black pepper and a touch of herbal earthiness.
Taste. Initial impression is bright and botanical. Grainy, rustic malt flavors from the Spelt provide a soft foundation for Shiso-driven notes of coconut and floral tea. The fermentation character is spicy with a cracked pepper bite and citrusy esters. Hop bitterness is moderate and earthy, harmonizing with a light tannic astringency from the leaf steeping. Finishes exceptionally dry and refreshing with a lingering herbal, spicy aftertaste.
Mouthfeel. Medium-full body, which is substantial for the style due to the Spelt grist, yet remains highly attenuated. High carbonation provides an effervescent, prickly sensation on the tongue. Features a very light alcohol warmth and a notable soft tannic astringency.
