Noble King is a vibrant, highly attenuated Saison that showcases the rustic terroir of the Texas Hill Country. This farmhouse ale opens with a distinctive bouquet of citrus and pome fruit esters, underpinned by the earthy, floral, and spicy notes of an abundance of organic Noble hops. The wild yeast fermentation introduces a complex, slightly funky depth and a subtle tartness that complements the soft, grainy malt backbone. Effervescent and bone-dry, it delivers a firm hop bitterness and a peppery finish that lingers elegantly. It is a masterful expression of tradition meeting wild fermentation, offering a refreshing and multifaceted sensory experience.
Appearance. Pale gold with a slight hazy luminescence from being unfiltered. Topped with a long-lasting, dense, rocky white head that leaves delicate Belgian lacing. High effervescence.
Aroma. High intensity aromatic profile blending fruity esters of lemon zest and green apple with spicy phenols reminiscent of cracked black pepper. The organic Noble hops contribute a prominent floral and herbal earthy character, while the wild yeast adds a faint rustic, earthy funk. Malt is low and lightly grainy.
Taste. Initial impression is bright and crisp with a soft, grainy malt sweetness that is quickly overtaken by fruity and spicy yeast character. Hop flavor is moderate, leaning toward herbal and floral. The bitterness is firm and emphasized by the beer's very high attenuation. The finish is remarkably dry and clean with a lingering peppery and citrusy aftertaste.
Mouthfeel. Medium-light body with very high carbonation providing a lively, prickling effervescence on the tongue. No significant alcohol warmth. Crisp and refreshing without any astringency.
