This Farmhouse Ale-inspired Brett Beer showcases the Jester King mixed culture with a vibrant, fruit-forward profile. Infused with roselle hibiscus and raspberries, it presents a striking sensory character, leading with an aromatic medley of jammy fruit and soft Tahitian vanilla. The use of Texas barley, oats, and raw wheat provides a rustic foundation, while milk sugar adds a subtle, creamy counterpoint to the dry, funky Brettanomyces character. The result is a sensory experience reminiscent of raspberry Greek yogurt, balancing bright berry acidity with delicate floral notes and a crisp, effervescent finish that highlights the brewery’s terroir-driven approach.
Appearance. Deep pink to soft ruby red in color; persistent, light pink head with fine lacing; slight haze from raw wheat and mixed-culture fermentation.
Aroma. High intensity; dominant notes of fresh raspberries and floral hibiscus; moderate funky esters of stone fruit and pineapple from the Brettanomyces; subtle, sweet Tahitian vanilla and a faint creamy scent; very low hop aroma.
Taste. Bold raspberry tartness and tangy hibiscus initial impression; moderate fruity esters; the milk sugar provides a soft berries and cream mid-palate that balances the high attenuation. Low bitterness; finish is dry and crisp with a lingering raspberry and earthy funk aftertaste.
Mouthfeel. Medium-light body with a slightly creamy texture from the oats and milk sugar; high carbonation; very low alcohol warmth; minimal astringency despite the fruit and hibiscus additions.
