This farmhouse-inspired Saison captures a Texas winter through a complex interplay of earthy and bright aromatics. The inclusion of raw beets imparts a distinctive root-like earthiness and a vivid hue, while orange juice and orange zest provide a refreshing citrus lift. Fresh thyme adds a savory, herbal layer that integrates seamlessly with the signature mixed culture, yielding notes of wild yeast funk and peppery phenols. At 4.9% ABV, it remains exceptionally drinkable, featuring a bone-dry finish and high carbonation that highlights the rustic, terroir-driven character of the Texas Hill Country.
Appearance. Vibrant reddish-pink to deep copper (10–15 SRM) due to the beet addition; topped with a dense, long-lasting, pale pink-tinted ivory head. Unfiltered and hazy with visible effervescence.
Aroma. High aromatic intensity featuring earthy, soil-like notes from raw beets and a bright, zesty citrus punch from orange zest. Subtle herbal thyme provides a savory counterpoint to fruity esters of lemon and pear. The mixed culture adds a complex layer of barnyard funk, light hay, and peppery phenols over a faint grainy malt base.
Taste. Initial impression is bone-dry and vibrant. Earthy beet flavors lead into a mid-palate of tart orange juice and spicy thyme. Hop bitterness is moderate but accentuated by the high attenuation and a light acidity from the native bacteria. Fermentation character is dominant, offering black pepper and rustic funk. The finish is exceptionally clean and lingering with a dry, herbal aftertaste.
Mouthfeel. Light to medium-light body with very high, effervescent carbonation. No alcohol warmth is perceived at this ABV. The mouthfeel is crisp and refreshing, with a slight puckering quality from the citrus and mixed culture acidity.
