Final Entropy is a rustic interpretation of a Kölsch, blending the crispness of German malted barley with the idiosyncratic depth of Jester King’s mixed culture. Poured a delicate gold, it offers a sophisticated interplay between the earthy, woodsy notes of Fuggles and the refined, spicy elegance of Saaz hops. While maintaining the style’s signature soft, grainy-sweet malt profile, the fermentation adds a whisper of dry complexity and wild-yeast fruitiness. The finish is remarkably clean and attenuated, driven by Hill Country well water, resulting in a refreshing, highly drinkable hybrid that bridges Old World tradition and farmhouse soul.
Appearance. Brilliant medium yellow to light gold with a delicate, frothy white head that shows moderate persistence and light lacing.
