This expressive Saison showcases the rustic complexity of farmhouse brewing through its distinctive conditioning on Spanish cedar. The sensory profile is headlined by a vibrant bouquet of citrus esters and cracked black pepper, deeply integrated with the resinous, botanical, and evergreen notes of the wood. A light, grainy malt backbone supports a firm hop bitterness and earthy hop flavors, which are amplified by the drying tannins of the cedar. Effervescent and highly attenuated, the beer finishes exceptionally dry with a lingering woody spice, balancing traditional yeast-driven fruitiness with a unique, forest-like aromatic depth.
Appearance. Deep gold to pale orange (7-9 SRM); hazy, unfiltered appearance; dense, rocky, long-lasting white head with significant Belgian lace.
Aroma. High aromatic intensity featuring moderate lemon and pear esters, medium-high spicy phenolics resembling cracked black pepper, and a prominent wood-derived cedar character of evergreen and balsam. Low earthy hop notes and a faint, sweet-grainy malt background.
