Jester King Brewery Colonel Toby
This session-strength Saison presents a rustic, vibrant sensory profile built on a base of Crisp Maris Otter and rolled oats. The nose is dominated by an aromatic burst of Citra and Centennial hops, yielding sharp notes of lime and grapefruit zest over the floral, herbal foundation of Cascade. Jester King’s mixed culture adds a layer of complex, peppery phenolics and a hint of wild, earthy funk. On the palate, a firm bitterness cuts through the lean, bone-dry body, finishing with a crisp, snappy effervescence and a lingering citrus-peel bite that belies its low alcohol content.
Appearance. Pale straw to light gold (approx. 3-4 SRM). Displays a voluminous, rocky white head with excellent persistence and intricate Belgian lacing. Clarity is slightly hazy due to the addition of oats and significant dry-hopping.
Aroma. Moderate-high intensity featuring a complex blend of citrusy hops and spicy yeast. Citra and Centennial provide distinct notes of grapefruit and lemon peel, while the mixed culture contributes peppery phenolics and a faint, earthy Brettanomyces-like musk. Low grainy-sweet malt aroma from the Maris Otter is present in the background.
Taste. Initial impression is bone-dry and refreshingly bitter. Flavors of lime zest, pine, and dried herbs from the Cascade and dry hops lead into a rustic, cracker-like malt mid-palate. Fermentation character is prominent, offering white pepper and a very light lactic tang. Finishes aggressively dry and clean with a lingering, snappy hop bitterness.
Mouthfeel. Light-bodied with a very high, prickly carbonation that creates a lively, effervescent mouthfeel. No alcohol warmth is detected. The rolled oats provide a subtle, smoothing silkiness that balances the high attenuation and firm bitterness.
