This vibrant Saison showcases a complex intersection of rustic Texas grains and bright New Zealand hops. The aroma leads with an expressive burst of tropical fruit and lime zest from Motueka and Rakau, complemented by the distinctive crushed grape and gooseberry notes of Nelson Sauvin. Fermentation with Jester King’s signature mixed culture adds a delicate earthy funk and peppery phenolics that weave through the fruity hop layers. The palate is exceptionally dry and effervescent, highlighting a soft, grainy malt backbone from native Texas grains and a firm bitterness. Naturally conditioned, it finishes crisp with a lingering citrus and floral aftertaste, epitomizing a modern, hoppy farmhouse ale.
Appearance. Pale gold with light orange hues (6-8 SRM); long-lasting, dense, rocky white head with excellent lacing; hazy and unfiltered with visible effervescence.
Aroma. High intensity; prominent hop notes of lime, apricot, and stone fruit alongside white wine and gooseberry. These blend with moderate fruity esters of pear and lemon, plus spicy black pepper phenolics and a low, rustic, grainy malt character with a hint of earthy funk.
Taste. Initial impression of bright tropical fruit and citrus pith. Mid-palate reveals a soft, grainy malt character quickly overtaken by firm hop bitterness and peppery yeast phenols. Hop flavors mirror the aroma with prominent lime, melon, and grape. The finish is bone-dry and highly attenuated with a lingering spicy and resinous aftertaste.
Mouthfeel. Medium-light body; very high carbonation producing a prickly, effervescent sensation; light alcohol warmth; smooth, rustic grain texture with no astringency.

So we’re happy to introduce Bird Bump — hoppy farmhouse ale brewed with New Zealand Motueka, Rakau, and Nelson Sauvin from our friends at Freestyle Hops. The fruity, tropical character of the hops melds really well with the fermentation profile from our mixed culture. Aside from that, the beer is rounded out by our well water and native Texas grains. Naturally conditioned.
