Audio Palette is a vibrant, session-strength Saison that captures the rustic terroir of the Texas Hill Country. This collaboration with Stillwater Artisanal pours a hazy straw hue, delivering a bouquet of bright lemon zest, white pepper, and earthy, floral hops. The use of malted spelt provides a soft, grainy foundation that balances the assertive dryness and high carbonation. Fermented with Jester King’s signature mixed culture, it reveals subtle native funk and a whisper of tartness that integrates seamlessly with the pome fruit esters. It is a lean, effervescent, and profoundly refreshing example of a farmhouse ale that prioritizes drinkability without sacrificing complexity.
Appearance. Pale gold (4 SRM) with a persistent, dense, rocky white head that leaves intricate Belgian lacing. Unfiltered and hazy, exhibiting high effervescence.
Aroma. Moderate to high intensity featuring a complex blend of Meyer lemon, pear, and cracked black pepper. Distinctive earthy and floral hop notes complement a rustic, grainy malt profile from the spelt. A faint, clean lactic tartness and wild yeast funk are present.
Taste. Initial impression is exceptionally dry and crisp. Flavors of soft, grainy malted spelt lead into a mid-palate of citrus esters and spicy yeast phenols. Hop bitterness is moderate but firm, enhanced by a very high attenuation. The finish is bone-dry and clean with a lingering mineral and peppery aftertaste.
Mouthfeel. Light to medium-light body with very high, prickly carbonation that creates a mousse-like texture. No alcohol warmth is perceived, and there is a refreshing, subtle acidity with zero astringency.
